I Love this dessert...Cold Organic Papayas with lemon wedges skewers with a honey syrup with caramelized ginger

This is the served plate of that scabetched fish that marinated for several hours and baked before serving!!!!
It is raining now in the South Caribbean Coast of CR and there for the best place to hang out is the kitchen. I have been cooking for some clients, friends and family members so here are some pictures!!!! Enjoy

Fundraiser even at TREE HOUSE the results where GRATIFYING!!!!!!

The event was a big success. more than one hundred people showed up and I was prepared for less than 50 so needless to say half way down the evening I run out of everything and the opportunity to sell double the amount. Worst than not selling what you make is missing the oportunity to sell more for lack of preperation...But on a good note food was great. People where happy responses where fabulous and CARIBBEAN SPOON did it again!!

Mini Chocolate Cup Cakes made with the help of Thomas 12 and Foster 6 years old



My little helpers for the day!!!They may seam a bit "wacky" but that is only because I just gave them the news.. - " we are going to make chocolate mini cup cakes"
1st - We got all the ingredients out and ready..just make sure we din´t have to run to the store in the middle of baking!!!!!
Chocolate Cupcakes: 
1/2 cup (50 grams) Dutch-processed cocoa powder 
1 cup (240 ml) boiling hot water
1 1/3 cups (175 grams) all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (113 grams) unsalted butter, room temperature
1 cup (200 grams) granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract
Chocolate Fudge Frosting:
4 ounces (120 grams) unsweetened chocolate, coarsely chopped
2/3 cup (150 grams) unsalted butter, room temperature
1 1/3 cups (160 grams) confectioners (powdered or icing) sugar, sifted
1 1/2 teaspoons pure vanilla extract
Than we started mixing all ingredients following the recipe. Thomas was in charge of wet ingredients and Foster on dry ones. I was in charge of hot ones.
Thomas added the butter and I started to wisk it as hard as possible, for the recipe asked for an electrical mixer, which we didn´t have handy and a good arm work out never hurt anybody and is always needed. 
After some two minutes of wiskin this is what it looked like!!!!
Hot water was boiling so I added it to the chocolate powder and set it aside to cool off to room -temperature.
Thomas added the eggs, one at a time and the vanilla.
mean time I put a pan with water on the stove and set the pan with chocolate to melt slowly!!! It worked wonderful and the kids got such a kick at the fact that the chocolate was melting and it wasn´t hot. They could stick their little finger in it with out getting burn. I needed to explain to them that is not always the case...
We all got join in the wisking for mommy´s arm didn´t take well..nedd more Tae bo this week!!!!
After Thomas added the chocolate powder mixture this was the final look of the batter
My phone gave up and pictures didn´t turn up so well...but you get the picture!!!!

How I make my hearty Caribbean Chicken Soup


These are all the veggies for my Caribbean Chicken Soup priviously chopped and ready

I forgot to take a picture to the chicken before I added to the olive oil but I seasoned it with black pepper, salt, ginger powder and spanish paprika to flavor it before and it rested for about 30 min. I than sautee the chicken slightly just to get the flavor of it out. 


Step #3 I remove the chicken set at side and in the same pot with out removing it from the fire I add the onions, calery and garlic first sautee till tender and add all remaining veggies and move so they all get the flavor oil on them
Step #4 I add the water some extra herbs I love rosemary on my soup, some scallions, and the red pepper you see on top - In Costa Rica Caribbean coast we call it Chile Panameño. cover it and let it come to a boil!              
These foam you see on top...I was told a long time a go that is the dirt that rises to the top so it needs to be removed.. So I always do that. I defenately don´t want my soup to be dirty!! =D

I served with one piece of chicken or with out for those that don´t like to eat the meat. Sometimes I take the meat out of the bones before serving it for it is easier to eat. Why not make it with chicken breast you may ask? Well, my preference I think the pieces with the bones give more flavor to the soup for it has a bit of fat in them.
My family loved it. my son who is finiky eater eat two bowls this time. We always add a little lemon for flavor or tame the hot spicy from the Panamenean pepper.
My husban and I had a nice cold beer with it. It really was a good meal for thae rainy day we are having! Provecho

Marta Robles (guitarra flamenca) y  Oriol Riart (tres cubano) son una pareja de músicos que intentan llevar un poquito de su cultura a todos los rincones a donde van, esta vez, a Puerto Viejo de Talamanca. En tree house fundación iguana verde.(un concierto acústico)
Provienen de Barcelona, aunque Marta es sevillana de nacimiento.
El repertorio que presentan consta de ritmos latinos, flamenco, son cubano, bolero, bossa nova, todo mezclado en un coctel de cuerdas y sonidos del mediterráneo.
Son piezas instrumentales, entre ellas versiones de temas conocidos como Lagrimas negras, Bésame mucho, Obsesión, Piensa en mí, y otros temas propios del dúo, como rumbas o alguna bulerías.
