Caribbean Spoon Catering Service

Caribbean Spoon offers private catering to small groups of 10 or people or more. Don´t wanna deal with the waits and crowds and just wanna have a taste of the Caribbean food and flair!!! Here we have Macarella en escabetch,

Our own delicious Caribbean Coconut sause over fish fillet just like the clients want it!!

I love colors and this is a presentation I love for our salads. This one is a simple carrots, cucumber and red pepper with a citrus vinaigrette sauce!!!

Arroz Integral / Whole Wheat Rice - Para Adriana Viveros

Mi amiguita Adriana Viveros me pidio esta receta y con mucho gusto se la doy!! Para mi el arroz integral es un favorito desafirtunadamente cuando se cocina para pequeños no siempre es facil. Por eso descubri k el secreto esta en el sabor!!! Siempre empiezo con un caldo de verduras. Lo preparo con todos los restitos k normalmente tiraria en la basura!!! Pero k tienen mucho sabor y color. Aqui agregue apio, ajo, cebola, chile dulce, zanahoria en un litro de agua y lo deje herbir por 1/2hora

El caldo cambia de color y el olor es inconfundible...le agrego sal solamente pero no es necesario.

Aqui en una arrocera agregue DOS tazas de arroz crudo que es igual a CUATRO tazas de arroz cocido. Y a este le agrego cuatro tazas de mi caldo, en este caso ya esta salado y para efectos de esta cena le agregue el zacate de limón, enroolladito para poderlo sacar al final!!! Aqui como enrrollarlo solito.

Se cocino en la arrocera..no lo toque para nada...y aqui le quitas el zacate de Limon si le as puesto.

y ya ves como creció y ademas quedo super suave y porosito...el sabor esta impregnado y no esta duro como normalmente lo sirven en los restaurantes.Tratalo a los chicos les gusto mucho!!!

A Quick Potatoe Salad with Tuna ceviche

Came back from my Tae Bo class hungry as a bear!!! These are one of those dangerous moment for our diets. I kept it cool and look for something easy and quick to make. left over boiled potatoes and can tuna was the only options available that I could work with really!!! some fine dice red pepper, red onion ( my favorite) cilantro, lemon juice and olive oil. Fresh ground pepper and sea salt to taste. Voila!!! mix it all up and pour it over lightly sauté peeled potatoes with garlic and fresh ground pepper and sea salt!!!

My Sea Food Delight!! was well received!!!

I started with olive oil & crushed garlic. I added the divined  shrimp ( with a small scissor right down the middle) I prefer to live the shell. After I added the calamari rings. let them simmer I added white wine, 2 tomatoes grated and slice red onions!!
They cook very quickly!! I let them simmer for about 15 min only enough to evaporate the white wine. I use as condiment fresh ground white pepper, sea salt, and some chopped cilantro!!! I love to cook with colors and flavors and the green was screaming at me to use it!!!


This is after the 15 min simmering time!!! I took picture with my cell phone so quality is lousy ... you should have been there!!! Caribbean Spoon will be happy to make it for you when you come and visit!!

My Caribbean Chicken with Coconut Milk

the chicken was already fried separately with a little sugar and later added to this pot with coconut milk, onions, tomatoes, carrots, fresh rosemary and scott bonnet chilly!
This is it...after 30 minutes of simmering on low heat. Creamy and delicious!!!!
